Disabling the Wake solved the issue - but MS intentionally made it difficult to do so as the process is owned by System and isn’t easily edited. One of these is called Reboot and appears to force a Wake & Restart to complete the installation of updates around 3AM. In Scheduled Tasks there’s a folder named Update Orchestrator that had several jobs with the Wake to Run flags enabled. I had the same issue with sleep-to-hibernate and unexpected wake ups on 3 machines and finally found a solution.
